To cut carrots into matchsticks use the fatter lower part of the root to make the longest matchsticks. Place the carrot on a damp cloth on your cutting board to prevent it from unsafely rolling. Very carefully, with a really sharp knife, cut about ten 1/8 inch slices on a wide diagonal.

Stack the slices two or three high. If you are new to cutting, cut just one slice at a time. Then cut each slice or stack length-wise into thin matchsticks.

I use the diagonally cut slices to serve with dips. The pieces have a large surface for scooping up the hummus or other dip in just one bite.
